Canadians LOVE butter tarts, but also like to argue about whether to include raisins. To make these easy, this recipe uses frozen tart shells, but feel free to make your own!
- 1/3 cup dark corn syrup
- 1/3 cup melted butter
- 1 cup brown sugar
- 2 eggs, lightly beaten
- 1 tsp. lemon juice
- 1 tsp. vanilla
- ½ cup pecans, chopped
- ½ cup raisins (optional)
- 24 frozen tart shells, thawed
Preheat oven to 375 degrees Fahrenheit. Mix corn syrup, butter and sugar with an electric mixer. Add eggs, and mix well. Add juice and vanilla, and mix well. Stir in pecans and raisins, if using.
Place tart shells on a rimmed cookie sheet. Fill with mixture, and bake for 12 to 15 minutes. Cool to serve, or freeze for later.
